Gluten Free Cookies
Ingredients Makes approx 30 Cookies
300g Gluten Free oats
250g Golden Syrup or similar
62 g Brown Sugar
125 g salted Butter
18 g Pumpkin seeds
31 g Sunflower seeds
50 g chopped Cranberries
Method
Set Oven Temperature…fan 150c…300f ….gas mark 2
Bun trays for about 30 Cookies
Warm butter, syrup and brown sugar in micro wave until dissolved.
Place all dry ingredients in mixer and blend with warmed ingredients
Roll into small balls about 30 g, place each one in the bun tray until full and gently flatten the tops of each cookie with a spoon. Bake in oven for 15 minutes or until they look golden and feel firm to touch. If you have more than one tray, change trays around half way thorough cooking.Cool in bun trays until cool enough to lift out and finish cooling on wire rack.
