Granola Eccles Cakes
Easy and quick recipe. Freeze well.
Set oven temperature to 220c /200 fan | gas mark 7
Ingredients
1 pack of ready rolled puff pastry (suitable for sweet and savoury baking)
1 egg or milk for sealing pastry
100g Currants
100g of Granola (variety of your choice)
A little brown sugar, (the amount is up to you, don’t forget there is Honey in the Granola)
Method
Mix currants, Granola and sugar together in a bowl. If you find you have too much mix, it does freeze for another day.
Place chilled puff pastry on lightly floured surface and cut into circles with cutter size of your choice, not too small. Place circles of pastry on baking tray that can be covered with baking paper if you wish.
Spoon Currant/ Granola mix onto centre of half the circles, leaving a border clear for sealing around the edge. Brush edges with beaten egg or milk. Place the other half of the circles firmly over the top of each filled circle and press the edges firmly together. Make two or three slits in the top, the knife must go right through the pastry, then the granola mix can come through the slit while baking.
Brush with beaten egg or milk for glaze. Sprinkle with caster sugar.
Place in centre oven and bake for 15- 25 minutes, (depending on size) until golden brown.
Delicious served warm or cold.
