Ingredients Serves 6
Crumble Topping
150g (5oz) plain flour or wholemeal if preferred
75g (3oz) butter (chilled)
75g (3oz)Midfields granola (original or wheat free)
75g (3oz) soft light brown sugar
1 Litre (1/4 pint ) pie dish
Apple base
3-4 Cooking apples, peeled and cut into thick slices, blackberries can replace one apple, best when in season.
2-3 tbsp caster sugar.
1 tbsp water.
Method
Pre heat the oven to 180 C (350 F) Gas Mk4
Place prepared apples ( and blackberries if being used ) water and sugar into a saucepan and cook over a gentle heat until slightly soft. Taste and add more sugar if needed. Tip into pie dish.
To make the crumble- place the flour in a large bowl, add chopped butter and rub in using finger tips until resembling breadcrumbs, don’t be over fussy as it will all melt when cooked, in fact better left a bit coarse. This stage can be done in a food processor. Add the sugar and Granola and mix. Sprinkle over the cooked apple in pie dish, do not press down as this will make it too cakey.
Bake for 30-40 mins until golden. Best served warm with Custard, Natural Yoghurt or Cream
